Cauliflower "steaks" with Bacon and Blue Cheese dressing

When we think of steak our mind tends to think of the grilled piece of meat that you would have on the bbq. Along side roasted vegetables and some french fries.
This quick recipe is another take on the classic steak and has another added favorite, bacon.
Cauliflower has gained wide spread popularity over the years as a replacement for potatoes and wheat. It's grown in a variety of colors and can be added to any dish for those who are looking to add food that is rich in vitamin C and B-6.
For those who are gluten free, this is popularly used for a pizza crust replacement. Mashed, riced or baked this textured vegetable is very versatile.

Here we are preparing it with bacon and blue cheese dressing!
Prep time: 5 minutes
Cooking time: 20 minutes
Servings: 2
Ingredients:
½ head cauliflower
1 Tbsp olive oil
Salt, pepper, to taste
4 bacon slices
2 Tbsp blue cheese salad dressing
Instructions:
Preheat oven to 425°F. Line a baking sheet with aluminum foil
Remove and discard the leaves and cut the cauliflower into 1- inch-thick slices (pictured below)
Place the cauliflower steaks on the baking sheet and brush with olive oil. Season with salt and pepper.
Place the bacon slices on the pan, along with the cauliflower floret crumbles
Roast the cauliflower steaks for 20 minutes
Place the cauliflower steaks on two plates. Sprinkle with blue cheese dressing, top with crumbled bacon, and serve

TIPS:
You can also roast or steam these "steaks" on the bbq. Be sure to add a bit more oil so it will not stick to the rack. Remove then add toppings.
